The Details
90% Chenin Blanc, 10% Grolleau Noir cultivated in the Turonian chalk soils of Montreuil Bellay in the Loire Valley. The grapes are wholoe-cluster directly pressed at low pressure. There is a separation of first press and end-of-press must, spontaneously fermented and briefly aged in stainless steel tank, bottled in the spring and aged sur latte for 30 months. Zéro Dosage. Disgorged in July 2023. Bottled unfined, unfiltered, minimal SO2 at bottling. 12.5%ABV
