55% Syrah, 45% Grenache from organically cultivated 30 year-old vines near Cassagnes in the Languedoc. Grapes are hand-harvested, whole-bunch co-ferment in 5000L fiberglass tank for 12 days before pressing and élevage also in fiberglass for 6 months before bottling unfined, unfiltered, minimal added SO2. 12.5% ABV
