The Details

100% organically cultivated older (45-55 years-old) vines from a 1.5-hectare plot in the Langhe. Grapes are hand-harvested, spontaneously ferment (60% destemmed, 40% whole-cluster) and macerate for several weeks before pressing. Aging for 8 monhts in concrete tank, then the wine is transferred to wooden vessels of varying sizes for a further 8 month élevage. Blended all back in stainless and bottled unfined, unfiltered, minimal to no additional SO2.
