The Details

A co-ferment of red and white grapes from lower, western Piemonte. Grapes are hand-harvested, co-macerate and co-ferment for a very short period of time prior to pressing. Spontaneous fermentation and aging in stainless prior to bottling unfined, unfiltered, minimal (<20ppm) added SO2.
