The Details

Old-vines (70-90 years old) biodynamically farmed and trained up old maple trees (an ancient style of vine cultivation) in Chianti. Primarly Sangiovese with Canaiolo, Malvasia Nera, Colorino, and other old Tuscan varieties. Grapes are hand-harvested, partially destemmed and spontaneously ferment/macerate for 1 month with period light pumping over and punchdowns prior to maturation in 400L ceramic vat (clayvers) for 1 year. Bottled unfined, unfiltered, minimal added SO2. (1000 btls made)
