The Details

80% Xarel-lo, 10% Macabeu, 10% Parellada from biodynamically farmed 70 year-old vines on red clay and gravelly. Grapes are hand-harvested, macerate for a few hours and are thereafter pressed whole-bunch. Spontaneous fermentation and aging in stainless steel tank and concrete egg for 9 months. Bottled unfined, unfiltered, no additional SO2. 11.5% ABV
