Organically cultivated high-elevation old-vine Sangiovese in a biodiverse pocket of Chianti Classico long an oasis in the midst of a heavily industrialized wine region. This is the top bottling of Caparsa. Traditional vinification - spontaneous fermentation in neutral oak of varying sizes followed by several years of élevage. Bottled unfined, coarsely filtered, no added SO2. 13.5%ABV
