This is a pristine, delicate red from Carmelo Santana who works on Gran Canaria, the second-most populous of the Canary Islands, after Tenerife.
Tasting Notes: Salty and crunchy with softened, fine tannins and a slightly rustic, black cherry core.
Vinification: An indigenous Canary Island blend of predominantly Listan Negro, with some Prieto and other native grapes. Hand harvested, foot trodden, 40% whole cluster fermented with native yeasts, and aged in neutral old French oak for a year give or take a month. Salty and crunchy with soft fine tannins and a dark rustic cherry base. Unfined, unfiltered, with no additional SO2.
