The Details
100% biodynamically cultivated Monastrell from 20 year-old vines in Paraje Castante close to the winery. Chalky/stony/sandy soils. Grapes are hand-harvested, 30% whole-cluster carbonically macerate in stainless steel while 70% get destemmed and spontaneously ferment also in stainless steel. A combination of saignée juice (48 hours after fermentation started) and 7-day-maceration-juice. Pressed to tank and the wine aged for 8 months before bottling unfined, coarsely filtered, minimal (<25ppm) added SO2.
