The Details

Single-vineyard, biodynamically cultivated, high-elevation, old-vine Cortese by the grape's greatest champion, Stefano Bellotti of Cascina degli Ulivi. This is a 2010 that was hand-harvested prior to a 3-day skin maceration followed by pressing into 25HL acacia botti where the juice spontaneously fermented and aged for 15 months before a further decade plus in bottle. Unfined, unfiltered, zero/zero. 13%ABV.
