The Details

85% Cartoixà, 15% Macabeu from organically farmed vineyards in Catalonia. Grapes are hand-harvested, destemmed and gently pressed. The juice settles for 24 hours and is racked to stainless steel tank for spontaneous fermentation and maturation for 9-12 months. Bottled unfined, unfiltered, no additional SO2. 12%ABV
