80% Embolicaire, 15% Cabernet Sauvignon, 5% Garnacha, all grapes hand selected in the field. No destemming, with fermentation in steel tanks and elevage in large neutral barrels. Unfined, unfiltered, no SO2. Distinctly funky, with a nose of forest floor, green tobacco and blackberry compote. A robust palate, full of salty minerality, acidity and supple tannins. Pop the lamb in the crockpot and get comfortable!
