The Details
100% Xarel-lo from the Alt Penedes in Catalonia, a selection of fruit from two vineyards organically farmed with biodynamic preparations applied by Celler Pardas. Grapes are hand-harvested, foot stomped for 3 days while the tank is slowly filled, macerate for 12 days thereafter in a tank and the wine is then pressed to inox for 5 months élevage. Unfined, unfiltered, minimal (<15ppm) added SO2. 10.5% ABV
