The Details

85% Pinot Noir, 15% Meunier from biodynamically cultivated vines over brown limestone/clay. Grapes are hand-harvested and directly pressed (Blanc des Noirs), spontaneously fermented and aged for 11 months in neutral barrique before bottling unfined, unfiltered, no additional SO2. 3 years in bottle before secondary fermentation kickstarted partially by honey they harvest from their apiary.
