The Details

100% Malbec from organically cultivated vines on the limestone plateaus of Cahors. Grapes are hand-harvested, and macerate 50% destemmed, 50% whole-cluster for 12-20 days prior to pressing. Spontaneous fermentation and aging in cement tank prior to bottling unfined, unfiltered, minimal (<20ppm) added SO2. 12.5% ABV
