The Details

100% biodynamically cultivated Chenin Blanc from Saumur's 'La Côte,' the white tuffeau slopes along the Loire in Parnay. The grapes are hand-harvested and slowly pressed over the course of 3 hours. The juice settles for 48 hours in tank prior to spontaneous fermentation sur lie in 225L neutral barrel. Élevage last 12 months in barrel (80% neutral, 20% new oak) prior to assembly for 3 months in steel tank and bottling unfined, unfiltered, minimal added SO2. 13.9%ABV
