Damson Plum Wine from Central Valley, California crafted by Châteauneuf-du-Fargosonini.
Tannic variety of Plum typically made into wine and Rakija in the Balkans. Foot crushed after hand-harvesting at peak ripeness. Fermented on skins and pits prior to pressing and bottling in 375mL at .3brix ensuring the tiniest bit of CO2 captured under crown-cap to preserve the wine's freshness. Unfined, unfiltered, no additional SO2. 12% ABV. Unbelievably singular.

Immanence, or transcendence, young vigneron? Whatever processes of the universe at large that bore out the human race from a lineage of animality need to be palpated. If we came out of something non-human, what does that mean? This wine is made from plums which were domesticated in the Neolithic Age, from civilizations so far gone that we only have bits of archaeology left from them. That is this wine's sense of place. Where do you come from?
