Châteauneuf-du-Fargosonini, "The Night is Also A Sun" 2024 [375mL]

100% organically cultivated Sagrantino in the foothills of the Sierra Nevada in California. Grapes are hand-harvested and macerate for 7 months prior to pressing and aging thereafter in acacia barrel. Bottled unfined, unfiltered, no additional SO2. 

The Night is Also a Sun, seven month skin contact Sagrantino which was pressed and aged in acacia barrels. Big cocoa notes, rustic oxidative qualities, depth. Sagrantino is from Umbria originally, this ones grown in the foothills of the Sierra Nevada. It means Sacrament. The most colorful and tannic of all vinifera grapes, we take this down a few notches with the long skin contact which has a bell curve effect on tannins any longer than a month or two. It was an experiment pulling knowledge out of non-knowledge.
