Courtesy of Burgenland Natural Wine Icon Christian Tschida, the Himmel auf Erden (tr.: "Heaven on Earth") rosé is composed of 100% Blaufränkisch grown in the limestone-dominant, highest sites of his holdings in his hometown of Illmitz. Picked over the course of 5 different harvest days to integrate the resulting wine with what Christian calls "the whole aromatic spectrum" of his Blaufränkisch parcels. Once hand-harvested, the grapes are destemmed and foot-crushed before the juice spontaneously ferments in large barrels sans racking. 1 year élevage in 500-1500L barrel. Unfined, unfiltered, no additional SO2 (Zero/Zero). 12% ABV
