The Details
Single vineyard Chenin from the Chat de Vigne parcel on her hillside in Jasnières, mid-slope southern exposure. Grapes are hand-harvested, softly pressed and fed to stainless steel tank by gravity for overnight settling of the must. Spontaneous fermentation and malolactic fermentation in steel prior to racking to neutral barrel for an 18 month élevage. Bottled unfined, unfiltered, no additional SO2. 13.5% ABV
