The Details
Champagne Cider project started by Quentin Paillard, Flavien Nowack, Adrien Renoir, Bertrand Lapie & Antoine Bouvet.
Rare cider from biodynamically cultivated orchards in the Montagne de Reims & some sourced from Normandy - trees range in age from 30 to 250 years-old. Hand-harvested, pressed, spontaneous fermentation lasts for up to a year in a cold cellar in Verzy with secondary fermentation in bottle kickstarted with the addition of fresh unfermented apple must. Aged for 12 months in bottle before disgorgement and release unfined, unfiltered, no additional SO2.
