The Details

Flagship wine of Cinque Campi! 75% Lampbrusco Grasparossa, 25% Malbo Gentile & Marzemino, proportions varying on the vintage. Grapes are hand-harvested and destemmed. 10 day maceration in open-top neutral oak and chestnut vat. Juice is then pressed to stainless steel tank where it spontaneously ferments. Bottled with a bit of its own unfermented juice causing secondary fermentation in bottle where it rests for 8 months prior to release. Unfined, unfiltered, no additional SO2.
