A truly stunning, deeper red Burgundy that shows off what Chorey-les-Beaune, a historically underrated village, can do in the right hands. Not simply light and charming but wears something more serious in its carriage -- let it breathe, and breathe and breathe...
From rented vines, this is 100% Pinot Noir from 20 year-old plants planted in the clay/limestone soils of a 2HA parcel in Chorey-les-Beaune. The grapes are destemmed and then undergo a 2-week maceration/spontaneous fermentation in stainless steel vat. Coarsely filtered and racked to neutral oak barrel where the wine undergoes a 16-month élevage. Bottled unfined with 25ppm SO2 at bottling. 12.5%ABV
