The Details
100% biodynamically cultivated Chenin Blanc in Anjou. Grapes are hand-harvested, and whole-cluster slowly & gently pressed in a pneumatic press. Spontaneous fermentation in neutral oak barrels from Leflaive. Aged for 1 year sur lie in 1-5 times used Burgundy barrel. Bottled unfined, unfiltered, minimal added SO2. 13%ABV
