The Details
100% Pinot Noir biodynamically cultivated on 25 year-old vines planted in flinty clay soils by the legendary Claude & Etienne Courtois in Sologne, in the southern Middle Loire. Grapes are hand-harvested, sorted, and slow-pressed in an old (manual) basket press. Spontaneous fermentation over the course of ~3 weeks prior to racking to neutral oak for an 18 month élevage. Bottled unfined, unfiltered, no additional SO2.
