From the Lambrusco-whisperer Claudio Plessi -- a man whose past 50 years of his life have been single-handedly dedicated to the preservation of the Emilian agronomic and viticultural heritage both in the field and in the classroom at the Universities of Parma & Bologna -- "Tiepido" is 100% Lambrusco Grasparossa that is hand-harvested from old-vines and macerates for six days with the skins in stainless steel tank prior to free-run juice transfer to a different tank for spontaneous fermentation. Refermented in bottle with some of the grape must of the same picking. Unfined, unfiltered, no additional SO2. 12%ABV
