The Details

Grenache/Cinsault/Bourbolenc from biodynamically cultivated vines on an isolated plateau in Saze, surrounded by scrubs/garrigue. Grapes are hand-harvested and vinified separately - Grenache and Cinsault are carbonically macerated in vat while the Bourbolenc is barrel fermented. Blended and aged for 6 months before bottling unfined, unfiltered, no additional SO2.
