The Details

100% Cinsault from 3 different organically cultivated plots with white marl/sand/limestone soils in Tavel. Grapes are hand-harvested, 50% are carbonically macerated for 8 days while 50% are directly pressed. Spontaneous fermentation and aging in neutral vessel for up to a year. Bottled unfined, unfiltered, no additional SO2.
