The Details
From Rochefort-sur-Gard in Southern France, "Papillon" is composed of biodynamically cultivated Grenache Blanc/Gris, Picardan, Vermentino, & Picpoul Gris with a variety of vine-ages, planted in sandy-silty/decomposed granitic soils. The grapes are hand-harvested and see an 11-day maceration prior to pressing. Spontaneous fermentation and élevage in neutral barrel. Bottled unfined, unfiltered, no additional SO2. Bottle-aged for 2+ years.
