The Details
From Faugeres in the Languedoc, this is Carignan with bits of Syrah, Grenache, and Mourvèdre from 70-90 year-old dry-farmed bush vines grown in slate-dominant soils. The grapes spontaneously ferment in a combination of whole-cluster and destemmed (50/50) macerating for 3 weeks in concrete vat prior to pressing. The wine is then aged for a further 30 months in concrete. Bottled in August 2023 unfined, unfiltered, no additional SO2.
