The Details

100% Gamay d'Auvergne from 60-100 year-old vines from 3 parcels on basaltic clay/limestone soils around 3 villages in the northern Auvergne at very high elevations (~600m). Grapes are hand-harvested, destemmed and crushed. 2 weeks stainless steel maceration/fermentation and pressing. Blended juices of press and free-run prior to aging which is for 8 months in both amphorae and flextank egg. Blended and settled thereafter in stainless for 2 months before bottling unfined, unfiltered, no additonal SO2. 12% ABV (175 cases made)
