The Details

100% organically cultivated Chenin Blanc from Vouvray, Loire. Grapes are hand-harvested from 30 year-old vines planted to an assemblage of terroirs (tuffeau/red clay/flint/shale). Early pick for acidity, the grapes are directly pressed to a combination of stainless steel and neutral barrel prior to bottling with liqueuer de tirage (no dosage) and 24 months sur latte. Disgorged and bottled unfined, unfiltered, minimal (<10ppm) added SO2.
