Former right hand man of Thierry Allemand in the vines and cellar for 5 years, Clotaire now biodynamically farms Gamay fruit across the Beaujolais. Very old vines. 

Short carbonic maceration followed by pressing and a brief élevage in neutral barrel. Unfined, unfiltered, no additional SO2. Zero/zero.
