The Details
From Ecklesheim in Germany's Rheinhessen, this is 70% Bacchus, 30% Riesling from organically cultivated vines planted to red sandstone soils. Grapes are hand-harvested and vinified separately. The Riesling is directly pressed while the Bacchus sees 4 day maceration. Spontaneously fermented and aged for 1 year each in fiberglass tank prior to blending, a short rest, and bottling unfined, unfiltered, 15ppm SO2.
