The Details
100% Garganega biodynamically cultivated in Gambellara in the Veneto. Grapes are hand-harvested, directly pressed and spontaneously ferment in stainless steel tank. A portion of the grapes are also harvested several weeks later (late-harvest) and hung to dry a la "Picai" method, until February. These sundried, concentrated Garganega grapes are then pressed in February and this remarkably concentrated, sweet juice is added to the first harvest. The wine is then bottled fermenting so that it finishes this secondary fermentation in bottle, creating a 'frizzante' style, bone-dry sparkler. Undisgorged, the wine ages in bottle sui lieviti. Unfined, unfiltered, minimal added SO2 depending on the vintage. 10.5%ABV
