The Details
60% Syrah and 40% Grenache Noir from 15-35 year old vines grown on schist soils in the village of Montner. The grapes ferment separately in stainless steel via carbonic maceration, and are then pressed off and aged seperately until fermentation completes. The wine is blended and put into stainless steel, where it rests over the winter and is the bottled unfined, unfiltered, with no SO2.
