The Details
30% Grenache Noir, 30% Syrah, 20% Carignan Noir, 20% Lledoner Pelut from organically cultivated vines at high elevation (200-500m). A mixture of ages - 17-112 years-old - the vines are planted to calcareous black shale and granite soils. Grapes are hand-harvested and spontaneously ferment separately in both concrete and stainless steel tanks. 90% of the wine's volume ferments whole-cluster while 10% are crushed. 1-week maceration prior to pressing. A small sulfur addition (~10ppm) added just before the completion of malo. Aged for 7 months in concrete tank and stainless steel. Bottling is vintage dependent - unfined, unfiltered, minimal (<25ppm) added SO2.
