The Details
From Croatia's Dalmatian Coast, this is 80% Syrah, 20% Plavina from organically cultivated vines on the karst/limestone soils of the coast. Grapes are hand-harvested and vinified separately --- Syrah macerates for 14 days and Plavina for 30 days prior to pressing. Spontaneous fermentation and aging for 1 year in stainless steel prior to bottling unfined, unfiltered, no additional SO2.
