The Details
From the former longtime right hand man of Vincent Laval at Champagne Georges Laval, this is a rare and kaleidoscopic Savagnin. There was a short maceration which helped round out the texture - gorgeous wine. From 2 plots - one in Arlay, one in Ruffey - this is 100% Savagnin that is spontaneously fermented and aged 2 years in neutral barrel sur lie prior to blending and bottling. Unfined, unfiltered, minimal (10mg/L) added SO2.
