The Details
This is a “vin de soif" from Sebastien Bobinet & Eméline Calvez. A wine to drink in its youth made from several parcels of Cabernet Franc done carbonically macerated. The texture is rather light with a fruity and fragrant character.
Vinification: 100% Cabernet Franc hand-harvested from 35 year-old vines grown in clay & white limestone (tuffeau) soils. The grapes are vinified with an assemblage of traditional and carbonic macerations (spontaneous fermentation, ambient yeasts; no temp. control). The wine matures in cuve for 4 months before being bottled unfiltered, unfined, no additonal SO2.
