The Details

100% bioydnamically cultivated Chardonnay from 40 year-old vines on clay/limestone soils in Santenay. Grapes are hand-harvested and whole-cluster directly pressed to neutral oak for spontaneous fermentation and aging for 12 months. Bottled unfined, coarsely filtered, low-to-no SO2 depending on vintage (not above ~20ppm, in bad vintages; zero in good ones).
