The Details

50% Pinot Blanc, 40% Pinot Gris, 10% Pinot Noir from biodynamically cultivated vines on clay/limestone soils in the Bas-Rhin. Grapes are hand-harvested, directly whole-bunch pressed and spontaneously ferment and age for 7 months in foudre before disgorgement and bottling unfined, unfiltered, no additional SO2. 15 months sur lattes before release on the market.
