This is a brisk and light take on Savagnin, one that soars above its more traditional expression of (delicious) forest foraging – ‘Courant d’Air’ (loose tr.: The Current of The Air) lives up to its name – a fresh breath of something clean. Vinification: 100% Savagnin hand-harvested from 70 year-old vines grown in calcareous clay and marl soils. The vines are farmed biodynamically. The grapes are directly-pressed and undergo spontaneous fermentation (ambient yeasts; no temp. control) in neutral oak and an extended (18-24
