The Details
A ridiculous Alpine white from a new grower for us from the Savoie. In Apremont in the Combe de Savoie valley, Matthieu Goury is organically farming 6 hectares of varieties native to the French Alps.
The grapes are hand-harvested and directly pressed into old-barrel for spontaneous fermentation, malolactic fermentation, and élevage. Little to no racking or bâtonnage results in a reductive winemaking environment which helps protect the wine. Bottled unfined, unfiltered, minimal added SO2 at bottling (10-15ppm). 11.5%ABV
