The Details
From one of the most famous hills in the Jura's Pupillin, this is Julien Mareschal's "Pinostradamus," 100% Pinot Noir from the Côte de Feule (36% avg incline, south-facing, Triassic marl soils). Grapes are hand-harvested and whole-bunch macerated for 14 days without pumpovers or punchdowns. Spontaneously fermented in stainless steel followed by aging in tank and sandstone amphorae (jarre en grés) for 10 months. Bottled unfined, unfiltered, no additional SO2. 11.5% ABV
