The Details

100% Poulsard from biodynamically cultivated vines in red clay soils near Arbois. Grapes are hand-harvested, 80% destemmed, 20% whole-cluster spontaneously ferment and age for a few weeks before pressing. Élevage in neutral barrel for a year before bottling unfined, unfiltered, no additional SO2.
