The Details
100% biodynamically cultivated Cabernet Franc on the upper part of the hill in Bourgeuil. Vines are 35-40 years old. Grapes are hand-harvested and macerate for <20 days prior to pressing. Spontaneous fermentation and aging in a combination of cement tank and neutral barrel. Bottled unfined, unfiltered, minimal to no added SO2 depending on the quality of the vintage.
