The Details

Old-vine Chardonnay, direct-pressed to neutral barrel for spontaneous fermentation and élevage. The fanciest estate cuvée, perhaps, previous vintage was a wild ride of some sugar and ripping acid and hermetic reduction on opening - a fascination. Unfined, unfiltered, no additional SO2.
