The Details

A sub-variety of Pinot Noir called Pinot Droit which means something like ‘straight/upright pinot,’ Benoît uses this and his light extraction in the cellar to match the sub-variety’s fresher aspect to equal a tongue-in-cheek “Right” Pinot. Whole-cluster. Neutral barrel. Unfined, unfiltered, no additional SO2.
