The Details
100% Pinot Noir from biodynamically cultivated vines in the En Bessy vineyard of Northern Burgundy's Dijon. The grapes are hand-harvested from 20-45 year-old vines and spontaneously ferment in a 'whole-cluster sandwich' with 2/3 whole-cluster grapes at the top and bottom of the tank with 1/3 destemmed grapes in the middle. The wine is pressed and ages in neutral barrel for 10-12 months prior to bottling unfined, unfiltrered, no additional SO2. 11.5%ABV

During the reign of the Ducs de Bourgogne, the wines from Plombiers were valued more than those of Gevrey or Chambolle. With expressive, energetic wines like the Coteaux de Dijon Pinot Noir, Marc Soyard is showing that this near-forgotten terroir overlooking Dijon can still deliver incredibly delicious and memorable wines. The owl is the symbol of the city of Dijon. The famous chouette is sculpted into the chapel of Notre-Dame de Dijon. Local legend says that if you rub the owl with your left hand while making a wish it will come true.
